The experience explores oyster farming in the far south of Florianópolis, where time moves at a gentler pace and Azorean traditions remain present. The programme begins with a visit to a working oyster farm to follow the full production cycle—from tiny seed to harvest, grading and distribution—highlighting rigorous sanitary controls and the techniques that make Florianópolis Brazil’s leading oyster producer.

A boat excursion then proceeds to the marine farms in Baía Sul, where oysters mature in calm, sheltered waters. Along the route, views alternate between the open blue of the sea and a coastline framed by hills and colourful seaside houses.

The itinerary culminates with a tasting of freshly harvested oysters, showcasing their freshness and delicacy. The day concludes with a walking tour of Ribeirão da Ilha, one of the city’s most traditional communities, where cobbled streets and 18th-century Azorean houses illustrate the heritage of the island’s earliest settlers.
